Nakanishiya is a soba restaurant with historical architecture and design, but with the contemporary standards of comfort. Wooden crafts of old Kiso are neatly displayed, giving off a distinct, unique style different than other regions of Japan. The owner-chef’s expertise and knowledge of soba allow him to bring out the inherent flavors of Kaida soba. During winter months, visitors can try the unique sunki soba, which uses a specially fermented pickled greens which have a distinct sour flavor.
